Weight Watcher Soup

Ingredients
- 1/2 cup zucchini
- 2/3 cup sliced carrots
- 1/2 cup diced onions
- 2 garlic cloves, minced
- 3 cups fat-free beef broth
- 1-1/2 cups cabbage
- 1/2 cup green beans
- 1 can diced tomatoes
- 1/2 tsp. basil
- 1/4 tsp. salt
- 2 tbps. olive oil
Directions
Saute’ carrot, onion, garlic, & 2 tbps. olive oil for 5 minutes.
Add remaining ingredients and cook till done. I dip out about 2 cups of vegetables and put in blender then return to pot. It makes soup thicker.
