Ingredients

  • 1 (12–15 lb) beef brisket
  • 2 Tbsp kosher salt
  • 2 Tbsp black pepper
  • 2 Tbsp paprika

Directions

Heat smoker to 235°. While smoker comes up to temperature, trim excess fat from brisket. In bowl, mix blend of kosher salt, coarse black pepper and paprika. Generously season brisket with spice blend. Place brisket in foil pan and smoke for 12 hours. At 12-hour mark, wrap pan tightly with foil and continue to smoke for 5 hours. Remove pan from smoker and let rest, covered with foil, for 45 minutes to an hour. Remove brisket from pan and slice.
