Tater Cakes

Ingredients
- 2 cups mashed potatoes
- 1 egg, lightly beaten
- 1/2 cup all purpose flour
- Salt and freshly ground pepper to taste
- 2 Tablespoons chopped green onion
- 1 Tablespoon butter
Directions
In a medium size mixing bowl combine mashed potatoes, egg, flour, salt, pepper, and chopped green onion. Mix well. Heat butter in a large frying pan over low heat. Drop by large tablespoonful into pan. Flatten with spatula. Turn potato cakes over when browned on bottom (5 to 7 minutes) and repeat process on other side.
PREPARATION TIME: 5 minutes.
