Taco Casserole

Ingredients
- 1 lb ground beef 1 onion, chopped
- 1 pkg taco seasoning
- ½ C water
- 4 C frozen cubed hash browns
- 1 (15 oz) can corn, drained
- 2 C shredded cheddar cheese, divided
- 1 (15 oz) can black beans, rinsed and drained
- 1 (15 oz) can diced tomatoes, undrained (optional)
Directions
Preheat oven to 350°. Brown meat with onion and drain. Add taco seasoning and water and mix well. Let simmer for 5 minutes. In a large bowl, mix hash browns, corn, beans, tomatoes and 1 cup cheddar cheese. Add meat mixture and mix well. Pour into greased 9×13-inch dish. Cover and bake for 30 minutes. Gently stir. Bake uncovered for 15 minutes or until the center is hot and stir again. Layer remaining 1 cup shredded cheese on top. Bake another 5 minutes or until the cheese is melted. Serve with sour cream, extra cheese, hot sauce, taco sauce, tortilla chips or other favorite taco toppings.
