Split Pea And Sausage Soup

Ingredients
- 1-1/2 cups dried split peas
- 5 cups boiling water
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 lb. smoked sausage (such as kielbasa), sliced very thin
- 3 ribs celery, diced
- 1 cup evaporated milk
Directions
Cook peas in boiling water for 1 hour. Add salt, pepper, sausage, and celery. Simmer for another hour. Add a little boiling water if necessary (a few tablespoons at a time) to maintain consistency. Just before serving, add evaporated milk. Blend well. Adjust seasoning if necessary.
