Savory Summer Ribs

Ingredients
- 1⁄4 C salt
- 2 Tbsp paprika
- 2 Tbsp chili powder
- 1⁄2 tsp cayenne pepper, or to taste
- 2 Tbsp granulated garlic
- 2 Tbsp light brown sugar
- 2 tsp dry mustard
- 2 tsp ground cumin
- 2 tsp freshly ground black pepper
- 1 tsp dried oregano
- 4 to 6 lbs spareribs
Directions
Mix all the rub ingredients in a small bowl or jar. Remove the transparent membrane from the back of the ribs (www.youtube.com/watch?v=ittr86wCEho). Rub the spice mixture all over the ribs to coat them completely. Cook on low, indirect heat on a covered grill or in a 275° oven, tightly covered with foil, for 3 to 4 hours. Serves 4 to 6 people (about 1 pound of ribs per person).
When making any sort of spice rub for meat, you have the option of doubling or tripling the recipe to store in a covered jar on a dark shelf or in the freezer (for longer storage).
