Sarah’s Autumn Spice Soufflé

Ingredients
- 2 lb sweet potatoes
- 2 eggs
- 3 Tbsp brown sugar
- 1 tsp pumpkin pie spice
- 1⁄4 tsp cayenne pepper, optional
- 1⁄4 tsp salt
Directions
Heat oven to 350°. Prick sweet potatoes in several places and bake for 1 1⁄4 hour. When cool enough to handle, scoop out all the sweet potato into a bowl, discarding skins. Add remaining ingredients and beat until smooth. Scoop into an 8×8-inch baking pan and bake at 400° for 15 minutes. If you make this ahead and refrigerate, it will need 30 minutes in the oven. Serves 8.
