Reader Recipe: Verde Chili

Ingredients

  • 1 Tbsp vegetable or olive oil
  • 1 lb ground pork or chicken
  • ½ onion, chopped
  • 1 (12–15 oz) jar salsa verde
  • 1 (15 oz) can cannellini beans, drained
  • 32 oz broth, chicken or vegetable
  • 3 garlic cloves, minced
  • ½ tsp cayenne pepper
  • ¼ tsp smoked paprika

Directions

Heat oil in medium saucepan, then add meat and cook until browned. Add chopped onion and saute until translucent, 5–7 minutes. Add garlic and stir until fragrant, followed by cayenne and smoked paprika. Add salsa and beans and cook 5 minutes. Stir in broth slowly, then turn heat to low and simmer 10–15 minutes. Enjoy with crusty bread.
