Pumpkin Roll
Ingredients
- 3 eggs
- 1 cup sugar
- 2/3 cup pumpkin
- 3/4 cup flour
- 1 tsp ginger
- 2 tsps cinnamon
- 8oz. cream cheese
- 1 cup powdered sugar
- 4 tbsp. butter
- 1 tsp. vanilla
- 1 tsp lemon juice
Directions
Beat 3 eggs 5 min. until fluffy.
Add:
1 cup of sugar gradually
2/3 cup pumpkin
3/4 cup flour (self-rising)
2 tsps cinnamon
1 tsp. ginger
Bake on cookie sheet 350 for 15 min.
Sprinkle with powered sugar
Roll up on dish towel.
Mix:
1 8oz. cream cheese
1 cup powered sugar
4 tbsp. butter
1 tsp. vanilla
1 tsp. lemon juice.
Spread on cake and sprinkle with pecans. Roll up and refrigerate before slicing.
