Pumpkin Cookies
Ingredients
- 2 cups flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 teaspoon cinnamon
- 1 cup sugar
- 1 stick margarine or butter
- 1 egg
- 1 cup canned pumpkin
- 1 teaspoon vanilla
- Frosting
- 3 tablespoons margarine or butter
- 4 tablespoons milk
- ½ cup brown sugar
- 1 cup powdered sugar
- 1 teaspoon vanilla

Stir together flour, baking soda, Salt, baking powder, and cinnamon. Cream sugar, margarine or butter, add egg, pumpkin and vanilla, mix well. Add dry ingredients to cream mixture and combine. Drop by teaspoon onto greased sheet. Bake 12-15 minutes at 350. Cool. Makes 4 dozen.
For frosting, boil margarine or butter, milk, and brown sugar for 2 minutes. Let cool and add sifted powder sugar and vanilla. Will be thin but will thicken as it cools on cookies.
