Old-Fashioned Southern Blackberry Cobbler

Ingredients

  • 1 stick butter
  • 2 pints blackberries (roughly 4 C)
  • ½ C sugar Juice and zest of ½ lemon
  • 1 C all-purpose flour
  • 1 C sugar
  • 1 C cream
  • 1 C milk
  • 1 tsp baking powder
  • ½ tsp vanilla bean paste (or 1 tsp vanilla extract)
  • ¼ tsp salt

Directions

Preheat the oven to 375°. Place butter in a 9×13-inch baking dish and place in preheated oven for 10 minutes to fully melt. Add blackberries, sugar, lemon juice, and zest to bowl and mix to combine fully. In another large bowl, mix flour, sugar, cream, milk, baking powder, vanilla and salt. Whisk until fully combined. Batter should have a runny consistency. 

Pour batter into heated pan with melted butter, then add the blackberry mixture on top. Do not mix or stir—everything will bake evenly in the oven. Bake 40 minutes or until golden brown on top. Remove and let cool for 10 minutes. Serve with vanilla ice cream and enjoy! Serves 10–12.
