No Fuss Pasta Soup

Ingredients
- 2 cups chicken broth
- 8 oz. frozen chopped spinach
- 1/2 cup orzo pasta
- 1 egg, lightly beaten
- 2 Tablespoons grated Parmesan cheese
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper Croutons
Directions
Cook chicken broth over medium heat until boiling. Set aside. Boil spinach, in enough water to cover, about three minutes and drain. Cook pasta in boiling water until tender. Drain. In a small bowl, whisk together egg, cheese, basil, salt, and pepper. Add egg mixture, spinach, and pasta to chicken broth. Simmer, whisking occasionally, for five minutes. Ladle into mugs and serve with croutons.
