Mini Monkey Bread Muffins

Ingredients

  • 1 (8-count) can flaky biscuits
  • ½ C sugar
  • ½ Tbsp cinnamon
  • ½ C brown sugar
  • ¼ C butter
  • For vanilla icing:
  • 1 C powdered sugar
  • 1 Tbsp milk
  • ½ tsp vanilla

Directions

Preheat oven to 350° and grease a muffin pan with nonstick baking spray. Open canned biscuits and slice each biscuit into six small pieces (48 pieces total). Combine white sugar and cinnamon in a gallon zip-close bag. Place biscuit pieces in the cinnamon-sugar bag, seal and shake until well coated. 

In a small saucepan, whisk brown sugar and butter over medium heat. Bring just to a boil and remove immediately from heat. Pour mixture in the bottom of each muffin tin, dividing evenly. 

Place four cinnamon and sugar-coated biscuit pieces in each muffin tin and bake 10–12 minutes. Do not overcook. While muffins bake, whisk icing ingredients in a small bowl until smooth. Remove muffins from oven and let cool 5 minutes in the pan. Drizzle icing over each muffin and serve while hot. Makes 12 muffins.
