Karen Day’s Pumpkin Pancakes
- Makes 8-12 pancakes.
SERVES
Ingredients
- 1 1/4 C self-rising flour
- 1/2 tsp each of cinnamon, ginger, and salt
- 1/8 tsp nutmeg
- 2 Tbsps brown sugar
- 2 Tbsps melted butter
- 1 C milk
- 9 Tbsps canned pumpkin (do not use pumpkin pie mix)
- 1 egg
Directions
Mix all ingredients together. Drop 1/8 C batter onto griddle or nonstick skillet on medium high. Flip when edges start to firm up. Makes 8-12 pancakes.
