Irish Soda Bread
Ingredients
- 4 cups bread flour
- 2 cups buttermilk
- 1 ½ cups raisins
- ¼ teaspoon salt
- 2 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons caraway seed
Directions
Preheat oven to 350.
In large bowl mix all ingredients except buttermilk.
With large spoon, make a wall in the center of mixture and buttermilk.
Stir until all liquid is absorbed.
If dough is to sticky, add a little more flour.
Turn out onto a floured surface and knead lightly.
Shape into 2 round loaves and place in 2 (8 inch) cake pans which have been greased.
Cut an X on top of each and bake for 30 to 35 minutes.
Slice and serve warm with butter.
2 small loaves.
