Individual Breakfast Quiches

Ingredients
- 6 eggs
- 2 cups milk
- 1 Tablespoon fresh chives or 1/2 Tablespoon dried
- 1/4 teaspoon salt
- 1/4 teaspoon ground pepper
- 2 cups grated Swiss or cheddar cheese
- 1 cup bacon, crumbled
- 1/2 cup onion, chopped
- 2-1/2 English muffins, crumbled
Directions
Preheat oven to 400°. Sauté onions in pan sprayed with cooking spray. Spray 6 ramekins with cooking spray. Beat together first five ingredients. Fold in cheese, bacon, onions, and English muffins. Ladle into greased ramekins and bake approximately 18-20 minutes. Serve in ramekins or loosen with knife around the sides and turn onto plate.
