Honey Baked Apples
- Serves 6.
SERVES
Ingredients
- 4 cups good quality apple cider
- 1/2 cup packed brown sugar
- 1/3 cup honey
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Pinch of salt
- 2 Tablespoons butter
- 6 Golden Delicious or McIntosh apples
- 1/2 cup golden raisins
Directions
Preheat oven to 350°. In a medium saucepan, combine cider, sugar, honey, cinnamon, nutmeg, salt, and butter. Bring to a boil and reduce heat. Simmer 25 minutes until mixture is syrupy.
Do not peel apples, but halve and core apples with a melon baller. Place apples cut side down in large baking dish and pour syrup over them. Distribute raisins evenly over apples. Cover tightly with aluminum foil. Bake 25 to 30 minutes or until apples are almost tender when pierced with the tip of a sharp knife. Remove from oven and turn apples over. Baste with syrup several times and re-cover with aluminum foil. Return to oven 5 minutes, remove, and allow to sit, covered, an additional 15 minutes. Baste before serving.
