Homemade Apple Butter Pie with Oat Crumble

Ingredients
- 1 pie crust (homemade or store bought)
- 1 apple, any sweet variety, thinly sliced
- Homemade Apple Butter:
- 14 Kentucky Proud apples, any sweet variety, cored, unpeeled and diced
- ½ C water
- 1 ½ Tbsp honey
- 3 tsp cinnamon
- 1 tsp dark brown sugar
- 1⁄8 tsp nutmeg
- Oat Crumble:
- ¾ C old-fashioned oats
- ½ C flour
- ¼ C brown sugar
- ½ tsp cinnamon
- Pinch of salt
- 4 Tbsp cold butter, cut into small pieces
Directions
Preheat oven to 350°. Prebake pie crust for 20–30 minutes.
For the homemade apple butter, place the 14 cored and diced apples and water in a large pot. Cover and bring to a boil.
Once it boils, reduce to medium heat and cook covered 15 minutes, or until apples are very soft.
Cool 5 minutes. Then place boiled apples, honey, cinnamon, dark brown sugar and nutmeg in blender, and puree until smooth.
For oat crumble, mix together oats, flour, brown sugar, cinnamon and salt. Add butter and mix until a crumble texture.
Scoop 1 ½ cups of apple butter into pie crust. Top pie with thinly sliced apples in a circular pattern; top with sprinkled oat crumble (½–1 cup).
Bake for 35 minutes and serve warm. Serves 8.
