Henkle’s Herbs & Heirlooms Tomato Pie Recipe

Ingredients
- 5 large heirloom tomatoes
- 1 deep dish pie crust
- 1 C each Hellmann’s Mayonnaise, shredded sharp cheddar cheese and Italian blend cheese
- 5 basil leaves
- Feta cheese chunks for topping
Directions
Prebake pie crust per directions and allow it to cool. Slice heirloom tomatoes and drain in a colander for 10 minutes. Place sliced tomatoes on paper towels and allow to drain for 15 additional minutes. Combine mayo and cheeses in a large mixing bowl and set aside. Layer sliced tomatoes in the pie crust and place basil leaves on top of them. Cover tomatoes and basil with the cheese mixture and top with chunks of feta. Bake at 350° for 20 to 25 minutes or until the cheese is golden brown.
