Gooey Butter Cookies

Ingredients
- 8 oz cream cheese, softened
- ½ C butter, softened
- 1 egg
- ¼ tsp vanilla extract
- 1 box yellow cake mix
- ¼ C powdered sugar
Directions
Preheat oven to 350°. Add cream cheese and butter to large bowl. Mix with hand mixer one minute until creamy. Add egg and vanilla and mix until just combined. Scrape down sides of bowl and add box of yellow cake mix. Mix until combined. Place in fridge and chill at least two hours. Once chilled, remove from the fridge and roll dough into 1-inch balls, then roll each ball in powdered sugar. Place on baking sheet lined with parchment paper. Bake 10–12 minutes. Optional: sprinkle with additional powdered sugar when cooled.
