Chicken Tarragon

Ingredients
- 4 boneless, skinless chicken breast halves
- Salt and pepper
- 1⁄4 C honey
- 2 Tbsp butter
- 2 Tbsp Dijon mustard
- 2 Tbsp fresh lime juice
- 1 Tbsp fresh tarragon or 1 tsp dried (Other herbs to substitute for the tarragon: oregano, dill, thyme, etc.)
Directions
Heat oven to 350°. Sprinkle chicken on both sides with salt and pepper. Combine remaining ingredients in a saucepan (or in a microwaveable container) and heat on medium (or in microwave) to melt the butter and mix the ingredients. Place chicken in a baking pan and pour sauce over. Brush the chicken with sauce several times during baking. Bake 30 minutes for 6- to 8-ounce pieces. Larger pieces will take longer. Serves 4.
