Chicken and Bowtie Pasta Salad

Ingredients
- Dressing
- ½ C olive oil
- Juice of 2 lemons (about 3–4 Tbsp)
- 3 Tbsp honey 1 garlic clove, minced
- 1 Tbsp fresh chives, minced
- ¾ tsp salt
- ½ tsp dried dill
- ½ tsp ground black pepper
- ¼ tsp red pepper flakes
- Salad
- 1 lb bowtie pasta
- 2 lb cooked chicken breast, cubed (about 5-6 C)
- 8 oz Italian salami, cubed
- 8 oz Italian salami, cubed
- 8 oz mozzarella pearls
- 1 red bell pepper, diced
- ½ bunch green onion, finely sliced
Directions
Bring large pot of water to boil and salt generously. Add pasta and cook for 8 minutes (do not overcook). Once finished, drain and add to large bowl along with chicken and remaining salad ingredients. In separate bowl, add all ingredients for dressing. Whisk to combine thoroughly. Pour dressing over pasta salad and toss, making sure to coat salad evenly. Serve immediately or refrigerate until needed. Serves 10-12.
