Breakfast Muffins

Ingredients

  • Nonstick cooking spray for muffin cups
  • 1/2 cup whole-wheat flour
  • 1 cup unbleached white flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • Egg substitute equaling 2 eggs
  • 1 cup lowest fat (1% or less) cottage cheese
  • 1 teaspoon fresh orange juice
  • 2 Tablespoons low-fat margarine, melted
  • 2 Tablespoons honey

Directions

Preheat oven to 400 °. Spray 12 muffin cups with cooking spray.

In a large bowl, mix the whole-wheat flour, white flour, salt and baking powder.

In a small bowl, combine egg substitute, cottage cheese, orange zest, juice, margarine and honey.

Pour wet ingredients into flour mixture, stirring only to combine.

Spoon batter into prepared muffin cups and bake 15 to 20 minutes until lightly brown.

Cool 7 to 9 minutes and remove from pan.

Excellent with all fruit-type jams.

Makes 1 dozen muffins.
