Bourbon Manor’s Apple Bacon Fritters with Bourbon Glaze Fritters
Ingredients
- 8 slices bacon
- 1 C milk
- 2 eggs
- 1 Tbsp granulated sugar
- 2 C flour
- 1 tsp baking powder
- 1⁄2 tsp salt
- 1⁄2 tsp cinnamon
- 1 apple, diced (about 1 cup)
- 2 cups vegetable oil for frying
- Glaze
- 1⁄3 C bacon drippings
- 1 C powdered sugar
- 1⁄4 C milk
- 2 Tbsp Kentucky bourbon (optional)
Directions
Heat oven to 400°. Line a rimmed sheet pan with foil. Lay the strips of bacon on the pan and bake 18 minutes. Remove and place bacon on a paper towel-lined plate. Save 1/3 cup drippings for the glaze. Dice bacon.
Heat milk in microwave for 1 minute. In a large bowl, whisk eggs and sugar. Add milk, then stir in flour, baking powder, salt and cinnamon. Add the diced apples and bacon.
Heat vegetable oil in a large skillet over medium heat to 325-350°. Drop a large spoonful of batter into the hot oil; use another spoon to scrape the batter off and gently flatten the fritter out into the oil. Cook 2 to 3 fritters in the pan at a time. Fry for 3 minutes. Flip and fry for 3 more minutes.
Place a baking rack over a sheet pan. Place cooked fritters on rack and continue to cook the rest of the batter.
In a small bowl, whisk together the bacon drippings, milk and powdered sugar. Flavor with 2 tablespoons of your favorite Kentucky bourbon.
