Apple Pancakes

Ingredients
- 2 C biscuit mix
- 1⁄2 tsp cinnamon
- 1⁄4 tsp nutmeg
- 1 C milk
- 1 C peeled firm apple, diced 1⁄4-inch
- 2 beaten eggs
- Oil for skillet
Directions
Mix all ingredients except oil in a bowl until well-blended. Heat a skillet over medium high heat. Add 1-2 tsp of oil and tip skillet to coat it. For each pancake pour 1⁄4 C batter into skillet. Cook 2 to 3 minutes until bubbles appear and edges are dry. Flip and cook 1 minute more. Makes 12 pancakes. Serve with syrup, whipped cream, or powdered sugar.
