Apple Stack Cake

Ingredients
- Apple Mixture
- 1 lb. dried apples
- 1 cup brown sugar
- 1 cup white sugar
- 2 tsps. cinnamon
- 1/2 tsp. allspice
- 1/4 tsp. ground cloves
- Enough water to cook apples
- Simple Cake
- 4 cups sifted, plain flour
- 1 cup sugar
- 4 tsps. baking powder
- 1 tsp. salt
- 1/2 tsp. baking soda
- 2 eggs
- 1/2 cup soft shortening
- 1 cup buttermilk
- 2 tsps. vanilla
Directions
For apple mixture:
Cook apples until tender. Mash thoroughly and add sugar and spices. Set aside and allow to cool slightly.
For cake:
Sift dry ingredients together and then add remaining ingredients to make a soft dough. Grease and flour 9″ cake pans. Put only 1/2 cup dough in each pan. Spread dough into pan and bake at 450 for about 5 minutes or until browned. While still warm, stack layers, spreading 2/3 to 3/4 cup of apple mix between layers, leaving the top layer bare. Cover tightly and allow mix to soak into layers. The dough makes about 10 layers.
