Breakfast Tacos with Fried Potatoes

Ingredients

  • 4 slices of bacon
  • 3-4 red potatoes
  • 4-5 eggs
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 1 tablespoon of butter
  • Dash of hot sauce
  • 1/2 cup shredded chedder cheese
  • Jarred jalapeños
  • Cilantro
  • Salsa
  • Seasoned salt
  • Flour Tortillas

Directions

In a medium skillet brown the bacon until crisp. Set aside. Into the skillet with the bacon fat add your sliced red potatoes. Sprinkle with seasoned salt to taste. Fry until tender and browned on both sides.

In another pan saute the onions and bell peppers in the butter until softened, about 4 minutes. Whisk the eggs and add to the skillet with the peppers and onions along with the hot sauce (optional). Scramble until set. Add the cheese and melt into the eggs. Add the eggs into the warm tortilla. Top with jalapeño rings, cilantro and salsa.
