SINCE HAVING OUR FIRST BABY last spring, I have been all about quick and easy meals. It took me a while to figure out how to cook dinner again. Suddenly, I didn’t have an hour or more to spend on cooking dinner—nor did I want to. Easy meals don’t have to sacrifice flavor, though. You can still make quick, delicious dishes that don’t require a ton of ingredients and are boldly satisfying.
This French toast casserole is perfect for prepping the night before and popping in the oven when you wake up. It’s a warm breakfast everyone will love this month.
