Ingredients
- 2 tsp chili powder
- 3⁄4 tsp oregano
- 3⁄4 tsp cumin
- 3⁄4 tsp salt
- 1⁄4 tsp cayenne
- 2 dark meat chicken quarters
- 2 Tbsp vegetable or olive oil
Directions
Mix all the spices and rub all over chicken. (This can be done the night before.) Heat oil in a wide, heavy pan, like a cast iron skillet, set over medium-high heat. Add chicken and cook 10 minutes or until brown. Flip the chicken, lower heat, partly cover with a lid ajar and cook 30 minutes more, or until cooked through. Serves 2. Serve with potatoes and a green salad.
