Ingredients
- Aromatic Oil (optional)
- 2 Tbsp vegetable oil
- 1 Tbsp minced garlic
- 1/2 tsp red pepper flakes
- Fish
- 4 green onions
- 1 lb firm fish fillets
- 1 tsp freshly-ground black pepper
- 3 Tbsp brown sugar
- 3 Tbsp fish sauce
- 2 Tbsp vegetable oil
- 2 Tbsp finely minced lemongrass
Directions
Heat oil in a small pan. Add garlic and red pepper and stir to separate garlic. Cook for 15 seconds or until garlic starts to color. Scrape into a dish and set aside.
Trim green onions of any wilted ends and roots, but keep green tops. Cut green onions in half lengthwise, then in 3-inch lengths. Set aside.
Put the fish on a large plate and sprinkle with pepper.
Combine sugar with 1/3 cup water in a small bowl and stir to dissolve. Add fish sauce.
Heat a cast iron or other heavy skillet over high heat. When it is hot, add oil. Add lemongrass and immediately add fillets, then sugar mixture. When the mixture boils, reduce heat to simmer and add green onions. Cook 5 minutes, then turn fish over and cook 5 minutes more. Add a little water if sauce thickens and threatens to burn. Serve with rice, topped with pan sauce and aromatic oil. Serves 4.
