Eggs-ellence

1. Shoppers can find Chelsey’s Eggs in Lexington at Whole Foods Market and Good Foods Market and Café, and in Louisville at Whole Foods, ValuMarket, Earth Fare, Creation Gardens, and Rainbow Blossom Natural Foods Market. The Seelbach Hotel uses Chelsey’s Eggs, and the CakeFlour Bakery on Market Street uses them exclusively. Jared’s beef products are available at Good Foods in Lexington and ValuMarket and Rainbow Blossom in Louisville.

2. Eggs kept a long time in the fridge will degrade but they won’t spoil. The yolks are more fragile and the whites are watery and won’t hold a peak well. They’ll be fine for scrambling, though.

3. Chickens that are allowed to roam in pasture (they love to eat grass) produce eggs that are higher in good stuff – Omega-3 fatty acids, vitamins E, D, and A – and lower in the bad stuff, like cholesterol and saturated fat, than conventional supermarket eggs.
