Secrets of the sweet potato

1. Long, slow cooking brings out the flavor in sweet potatoes. You can microwave sweet potatoes, but they'll taste best and have a silkier texture if you bake them for an hour or more at 350 degrees.

2. The more deeply colored the sweet potato, the moister the flesh and the more beta-carotene it contains.

3. Sweet potatoes are not yams. Yams are starchy tubers that have an almost black bark-like skin, have white, purple or reddish flesh and grow in the tropics. Sweet potatoes are a different plant species, and are more often red or orange, though they can also have white flesh.
